800 grams green Beans

2 Peaches
2 small mild onions
1 lemon
1 Tbsp honey
150 grams Yogurt (0.1% fat)
2 Tbsps Whipped cream
freshly ground peppers
Garam Masala (to sprinkle)
Chervil (for garnish)

Preparation steps

1.

Brush the beans, rinse and blanch for 6-8 minutes in salted water, strain, rinse and drain. Rinse the peaches, cut in half, remove pits and cut into thin wedges. Peel the onions and cut into rings.

Rinse the lemon in hot water and zest the peel. Squeeze the juice and bring to a boil with the zest and honey. Remove from the heat and let cool.

For the dressing, combine the yogurt with the cream and 1-2 tablespoons water, season with salt and pepper. Toss the beans in the dressing and serve with the onion rings and the peach slices on plates. Drizzle the lemon honey over top, season with garam masala and serve garnished with chervil.
