Preparation steps

Rinse and trim beans. Peel and cut potatoes into small pieces. Rinse watercress and parsley and strip leaves from branches. Steam beans, potatoes, and herbs, 15-20 minutes in a steamer inserted in a saucepan. Then puree until smooth, stir in oil, and season with salt and pepper.
