For the crust
500 grams Pastry flour
40 grams Yeast
1 pinch sugar
¼ l water
5 Tbsps olive oil

2 garlic cloves
3 Tbsps olive oil
1 can peeled Tomatoes
1 tsp oregano
150 grams pecorino romano
1 bunch parsley
100 grams green Olives

Preparation steps

For the crust, place flour in a bowl, make a well in the center and crumble in yeast. Mix together the warm water, sugar and olive oil, pour into the well, top with a little of the flour and let rest, covered, 30 minutes. Then knead well until the dough begins to bubble. Cover and let rise for 60 minutes in a warm place.

Roll out 4 pizzas of about 20 cm (approximately 8 inches) in diameter each and place on baking sheets. Dock dough surface with a fork several times. For the filling, peel onion and garlic, chop finely, sauté in olive oil briefly and season with oregano, salt and pepper. Add tomatoes and simmer for 30 minutes over low heat. Spread tomato sauce on the dough. Coarsely grate the Peccorino cheese and sprinkle over the sauce. Chop parsley finely and sprinkle pizzas with parsley and olives. Bake in a preheated oven at 200°C (approximately 400°F) until crispy, about 15 minutes.
