- 4 small, skinless Chicken breasts (cut into strips)
- 2 Tbsps olive oil
- 1 yellow pepper (diced)
- 1 red pepper (diced)
- 1 green Bell pepper (diced)
- 4 Flour tortillas
- 1 Lime (cut into thin wedges)
- 2 scallions (finely chopped)
- ¼ cup sweet Chili sauce
- salt
- freshly ground peppers
Preparation steps

Preheat the grill to hot. Toss together the chicken, olive oil, peppers, and seasoning in a mixing bowl.

Arrange the chicken on a grilling tray and grill for 6 - 7 minutes, turning occasionally. Add the peppers to the grilling tray and continue to cook for 3 - 4 minutes until lightly coloured.

Toss the chicken and peppers with the lime, spring onions, and chilli sauce. Season to taste as needed.

Grill the tortillas for 1 minute, turning once, and then top with the chicken and vegetable filling before serving.
