1 tsp thyme (chopped)

Preparation steps

Cut the lamb into cubes and mix with 3 tablespoons oil. Season with salt, lemon juice, pepper and thyme. Refrigerate for at least 30 minutes to marinate. Peel the onions and cut into thick slices. Trim zucchini and cut into thick slices. Remove the lamb from the marinade and alternately thread with the zucchini slices and onion slices on wooden skewers.

Rinse the endive, trim and cut in half lengthwise. Coat a baking dish with 1 tablespoon oil and sprinkle with sugar. Place endive cut-side down in baking dish and bake in preheated oven at 200°C (approximately 400°F) for about 15 minutes. Turn endive over, drizzle with vinegar and place a halved tomato on each piece. Bake 5-8 minutes. Meanwhile grill the skewers on the preheated grill or in a grill pan with the remaining oil, about 7 minutes, turning frequently. Arrange endive and skewers together on plates and serve.
