- 53 ozs Rack of lamb
- salt
- freshly ground Black pepper
- 3 Tbsps Oil
- 6 Tbsps Tomato juice
- 1 Tbsp tomato puree
- 2 Tbsps hot sauce
- 4 Tbsps honey
- 1 dash Tabasco sauce
- 1 Tbsp Red wine vinegar
- 1 tsp paprika
- 1 pinch cayenne pepper
- 2 cloves garlic cloves
Preparation steps

Heat the barbecue.

Cut the rack of lamb into 2 equal pieces and rub with salt and black pepper. Pour the oil, tomato juice, tomato puree, hot sauce and honey into a saucepan and warm, stirring continuously until the honey is liquid. Now stir in the Tabasco, red wine vinegar, paprika and a pinch of cayenne pepper. Peel and crush the garlic and add to the marinade.

Place the lamb on the hot barbecue and grill for 25-30 minutes, turning frequently. During the last 10 minutes brush with the marinade, until the meat is nicely browned.
