Preparation steps

1.

Rinse the squid and pat dry. Season with salt and pepper to taste and drizzle with 2 tablespoons of the oil. Place on a preheated grill and cook, while turning the squid continuously, about 6-8 minutes.

In a small bowl, combine the remaining oil with the lemon juice. Season with salt and pepper to taste.

Remove the squid from the grill and cut into bite-size pieces. In a bowl, toss the squid with the dressing and parsley. Season with salt and pepper to taste and serve.
