- 6 Tbsps olive oil
- 1 garlic clove
- 1 Tbsp chopped, mixed Fresh herbs
- salt
- freshly ground peppers
- 1 Tbsp Vinegar
- 2 Zucchini
- 2 pre-cooked Corn (Cooked 8-10 minutes in salted water or substitute canned.)
- 1 green Bell pepper
- 4 onions
- 12 Cherry tomatoes
- Ketchup (for brushing)
Preparation steps
1.
Mix olive oil with garlic (pressed through a garlic press) and finely chopped herbs. Season with salt, pepper, and vinegar.

Rinse vegetables. Peel zucchini in stripes. Cut corn into thick slices. Halve peppers, remove seeds and ribs, cut into bite-sized pieces. Peel onion and cut into eighths. Thread vegetables alternately onto skewers. Brush with garlic-oil and place on a hot grill. Grill, brushing repeatedly with garlic-oil, about 10 minutes. Finally, brush with some ketchup.
