1 large Zucchini
12 slices Pancetta (or bacon)
2 Bell pepper (yellow and red)
12 Cherry tomatoes
12 shallots
3 Tbsps mixed, chopped Fresh herbs (such as sage, rosemary and thyme)
4 Tbsps olive oil
salt
freshly ground peppers

Preparation steps

Preheat the grill.

Rinse the zucchini, trim and thinly slice lengthwise with a vegetable peeler. Roll up and place on soaked wooden skewers. Roll up the pancetta and place on the skewers.

Rinse the peppers, cut in half, remove the seeds and cut into large pieces. Rinse the tomatoes and cut in half. Peel the shallots. Stick the peppers, tomatoes and shallots on the skewers. Whisk the herbs and olive oil together and season with salt and pepper. Brush over the skewers and grill for about 7 minutes, turning occasionally.

Arrange the skewers on serving plates and serve with potato wedges, if desired.
