For the pastry
125 grams Quark
250 grams Pastry flour
1 tsp Baking powder
125 grams cold butter
salt
For the topping
100 grams Whipped cream
50 grams Crème fraiche
60 grams Mozzarella (grated)
60 grams Emmentaler cheese (grated)
60 grams Cheddar cheese (grated)
2 eggs
salt
peppers
1 tsp Mustard
1 tsp grated Lemon peel
4 slices smoked ham
4 Ramekins (12 cm ⌀)

Preparation steps

1.

For the pastry: drain quark well in a sieve. Mix flour with baking powder and combine with butter cut into small pieces, 1 pinch of salt and quark. Quickly knead to a smooth pastry and refrigerate, covered, for 30 minutes.

For the topping: whisk cream with crème fraîche, mozzarella, Emmentaler cheese, Cheddar and eggs, season with salt, pepper, mustard and lemon zest.

Roll out pastry on a floured surface thinly and cut out 4 circles. Line 4 ramekins with it, making edges all around. Spread each with cream mixture and top each with a slice of ham. Bake in preheated oven at 200°C (approximately 400°F) for about 30 minutes. Remove from the oven and serve.
