1 pinch salt
10 ozs Pastry flour
3 ½ ozs ground Hazelnuts (or almonds)
1 tsp Baking powder
5 Tbsps sour Whipped cream
2 Banana
1 Tbsp lemon juice

Preparation steps

Grease the loaf pan with butter and sprinkle with the ground nuts. Preheat the oven to 180°C / 350°F.

Beat the butter and sugar until light and fluffy. Separate the eggs. Beat the egg whites with a pinch of salt until stiff. Gradually beat the egg yolks into the butter mixture. Continue stirring until the mixture is fluffy. Mix the flour, baking powder and nuts. Sift the flour mixture into the butter mixture and mix well. Peel the bananas and puree with the lemon juice and sour cream. Fold the banana puree into the batter and mix until smooth. Fold the egg whites into the batter and pour into the loaf pan.

Bake for about 45 minutes, until a toothpick inserted into the center comes out clean.

Remove from the oven, cool briefly in the pan and finish cooling on a wire rack. Serve warm.
