- 6 small Mackerel (pin-boned)
- 1 Tbsp Avocado oil
- 1 Tbsp thyme
- 4 cups mixed-leaf salad
- 4 cups cooked in vinegar Beets (diced)
- ½ cup Walnut
- salt
- freshly ground Black pepper
Preparation steps

Preheat the grill to hot. Arrange the mackerel fillets on a grilling tray and season with salt and pepper.

Drizzle with oil and sprinkle their tops with thyme leaves. Grill for 5 - 6 minutes until the flesh is cooked through and beige in colour.
3.
Remove from the grill and leave to cool briefly before flaking.
4.
Divide the salad and sliced beetroot between serving plates. Top with the mackerel, walnuts, and a little more seasoning before serving.
