Ingredients

For the waffles
½ cup softened butter
4 eggs
1.333 cups all-purpose flour
1.333 cups milk
1 cup grated Parmesan
Nutmeg
vegetable oil (for the waffle iron)
For the salsa
4 Tomatoes (finely diced)
1.333 cups Feta (diced)
1 clove garlic cloves
½ handful Basil (finely sliced)
2 Tbsps olive oil
2 Tbsps white balsamic vinegar
sugar

Preparation steps

Beat the butter until light and fluffy. Add the eggs one by one, beating in after each addition. Slowly add a pinch of salt and the flour, beating all the time. Mix in the milk and the parmesan and leave to stand for around 30 minutes.

Meanwhile, for the salsa, mix together the tomatoes and feta. Crush the garlic in a press and add to the bowl. Add the basil, oil and vinegar and season to taste with salt, ground black pepper, sugar and a pinch of chilli.

Season the waffle batter with salt, ground black pepper and nutmeg.

Heat the waffle iron to a moderate temperature. Brush with oil and fry batches of golden brown waffles. Serve with the salsa.
