1 bunch scallions
2 ripe Tomatoes
3 Tbsps sun dried Tomatoes (in oil)
150 grams ham (sliced)
1 Red onion
2 Tbsps olive oil
8 slices day-old white bread
350 milliliters Whipped cream
4 eggs
100 grams freshly grated Parmesan
1 tsp freshly chopped thyme
1 Tbsp freshly chopped parsley
salt
freshly ground peppers

Preparation steps

Rinse and dry scallions, cut ino rings. Rinse tomatoes, cut into quarters and remove seeds and stalks, dice into small cubes. Drain well sun dried tomatoes and chop. Cut ham into strips. Peel onion and cut into thin strips. Heat oil in a pan and saute ham, scallions, dried tomatoes and onion briefly. Remove from heat and let cool.

Cut bread into large pieces, mix with sauteed vegetables and tomato cubes and spread in a buttered casserole dish. Whisk cream with eggs, half of cheese and herbs, season with salt, pepper and nutmeg and pour mixture over bread so that everything is well covered. Sprinkle with remaining cheese and bake in preheated oven at 200°C (approximately 400°F) for about 30-35 minutes or until golden brown. Remove from oven and serve immediately.
