- 1 ½ cups Brown Lentils
- ⅜ cup olive oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 1.333 cups Chorizo (halved lengthways and sliced)
- 2 carrots (sliced)
- 1 green pepper (diced)
- 2 Tomatoes (peeled and diced)
- 1 ⅔ cups potatoes (diced)
- 2 bay leaves
- cayenne pepper
- 1 tsp ground paprika
- 2 Tbsps white wine vinegar
Preparation steps

Soften the lentils overnight in cold water. The next day rise and drain.

Heat the oil in a pot and fry the onion and garlic. Add the chorizo, fry for a few minutes, then add the lentils. Top up with cold water and cook on a medium heat for around 15 minutes.

Add the vegetables and the bay leaves and add some more water if necessary. Cook for another 25 minutes and season to taste with salt, cayenne pepper, paprika and vinegar. Remove the bay leaves and arrange on plates. Serve hot.
