1 Rack of lamb (with long ribs 800 grams, divided in half)
2 shallots
2 stems parsley
2 stems thyme
2 stems Peppermint
1 sprig rosemary
60 grams White bread crumbs
50 grams Parmesan (freshly grated)
30 grams softened butter
1 egg
3 Tbsps coarsely chopped Sunflower seed
2 Tbsps Mustard
4 Tbsps olive oil
salt
freshly ground peppers

Preparation steps

1.

Remove rind from meat and trim ribs of fat or have butcher prepare. Rub with pepper.

2.

Peel shallots and very finely chop.

3.

Rinse herbs, shake dry, pluck leaves from the stems and finely chop.

4.

Mix breadcrumbs, Parmesan cheese, herbs, shallots, butter, egg and sunflower seeds together.

Sear meat in hot oil in a roasting pan. Season with salt and then bake in a preheated oven at 140°C (approximately 275°F) for 25 minutes. Remove, sprinkle with mustard and then spread on herb mixture. Bake at 180°C (approximately 350°F) for 5 minutes or until topping is golden brown.

6.

Allow meat to rest briefly. Then slice and serve.
