Preparation steps

Mix flour, eggs, oil and 1/2 teaspoon salt in a bowl and knead quickly into a smooth, pliable dough. Form dough into a ball, wrap in aluminum foil and let rest at room temperature for about 30 minutes.

Then roll dough out on a floured work into a thin layer. Cut into strips of about 2x8 cm (approximately 1x3 inches). Let rest on the floured work surface until needed.

Rinse cabbage, trim, remove stalk and outer leaves and cut into thin strips. Peel onions, finely chop, cut remaining ones and cut into fine strips. Melt the butter in a large saucepan, sauté the chopped onions and sprinkle with sugar. Leave to caramelize. Add the cabbage to the onions and fry briefly. Salt and pepper and pour the broth, cover and simmer about 15 minutes.

Cook the pasta in boiling salted water for about 5 minutes until al dente. Drain and leave to drain. Heat the oil in a pan and fry the onion strips therein with stirring brown. fry the noodles briefly, then both mix with the braised cabbage, season with salt and pepper and serve.
