For the roast pork
1 kilogram Roasted pork
1 onion
3 garlic cloves
½ bunch parsley
½ bunch Basil
2 sprigs oregano
3 sprigs thyme
1 sprig rosemary
6 Sage
2 Tbsps olive oil
salt
freshly ground peppers
150 milliliters dry white wine
250 milliliters Vegetable broth
To serve
500 grams green Beans
500 grams Cherry tomatoes

Preparation steps

1.

For the pork: Peel the onion and garlic and chop finely. Rinse the herbs, shake dry and chop finely. Mix with the onion, garlic and oil. Preheat the oven to 200°C (approximately 400°F).

Season the meat with salt and pepper and coat with the herb mixture. Place in a roasting pan and roast for about 30 minutes. Deglaze with the wine and broth, reduce the heat to 160°C (approximately 325°F) and roast for about 1 hour, or until cooked to your liking.

For the green beans: Trim the green beans, rinse and cook in boiling salted water for about 10 minutes.

4.

Blanch the tomatoes in boiling salted water, shock in ice water and peel.

5.

Remove the pork from the oven and let rest briefly.

6.

To serve, slice the meat and serve with the pan drippings, green beans and tomatoes.
