4 cups milk
2 bay leaves
2 tsps dried oregano
1 Lemon peel (big piece)
freshly ground peppers
2 onions
salt
2 tsps Pastry flour
3 Tbsps olive oil

Preparation steps

Add the bay leaves, oregano and lemon peel (without lemon juice) to the milk. Season with pepper. Peel an onion, cut into rings, and add to the milk. Put the pork in the milk and marinade in the refrigerator overnight. The next day, remove the meat, drain and dry with paper towels.

Season the pork with salt, pepper and flour. Peel and finely chop the remaining onion. Heat oil in a Dutch oven and brown the pork on all sides. Add the onions and saute briefly. Add the milk marinade through a sieve. Reduce the heat. Cover and cook on low heat for 60-80 minutes.
