- 1 ⅛ cups le puy Lentils
- 2 onions (sliced)
- 1 Bouquet garni
- 2 Tbsps balsamic vinegar
- 6 Tbsps extra virgin olive oil
- 2 Tbsps chopped, mixed Fresh herbs
- salt
- freshly ground Black pepper
- 1 Tbsp butter
Preparation steps
1.
Put the lentils in a pan with 1 sliced onion and the bouquet garni. Cover with water and bring to a boil. Cover and simmer for 25 minutes. Leave to stand for 5 minutes, until the water is almost completely absorbed.

Remove the bouquet garni and tip into a bowl.
3.
Whisk together the vinegar and olive oil. Stir in the herbs and season to taste with salt and pepper.
4.
Add half the dressing to the warm lentils and onions and mix well.
5.
Divide between serving dishes and drizzle over the remaining dressing.
6.
Heat the butter in a frying pan and cook the onions until soft and just golden. Drain and place on top of the lentil salad.
