100 grams sun-dried Tomatoes (in oil)
1 onion
2 garlic cloves
1 yellow Bell pepper
4 allspice
1 bay leaf
1 cloves
1 sm piece Cinnamon stick
4 Tbsps brown sugar
1 tsp mustard powder
100 milliliters Wine vinegar
salt

Preparation steps

Rinse the tomatoes, remove the core, nd coarsely chop. Drain the sun-dried tomatoes, reserving the oil. Peel the onion and garlic. Finely dice the onion, and thinly slice the garlic. Rinse and halve the pepper. Remove the seeds and finely dice. Add the allspice, bay leaf, clove, and cinnamon to a piece of cheesecloth or a spice bag. Seal the bag or cheesecloth with a piece of kitchen twine.

Heat 2 tablespoon of the reserved tomato oil in a pan. Sweat the onion, garlic, and pepper in the oil. Add the tomatoes, sun-dried tomatoes, and the spice bag and simmer for 15 minutes. Mix in the sugar, mustard powder and the vinegar. Simmer another 15-20 minutes until thickened. Remove the spice bag, then pass the mixture through a fine strainer into a pan. Return to a boil, season to taste with salt and cayenne pepper, and pour into clean bottles. Seal tightly and cool completely.
