Ingredients
- for the cakes
- 500 grams Pastry flour
- fresh Yeast
- 250 milliliters lukewarm water
- 1 tsp sugar
- 100 milliliters olive oil
- Frying oil
- For the topping
- 200 grams honey
- Juice (of 1 lemon)
- Juice (of 1 orange)
- 30 grams Sesame seeds
Preparation steps
Place the flour in a large bowl and make a well in the center. Crumble the yeast into the well, add the sugar and mix with a bit of the lukewarm water. Cover and let stand for 15 minutes. Add the olive oil and remaining water and knead with the dough hook attachment of an electric mixer until a smooth dough is formed. Cover and let rise for 1 hour.
Transfer the dough to a floured surface and knead a few times. Shape the dough into walnut-sized balls and roll into oblong shapes. Heat the frying oil to 160°C (approximately 320°F). Working in batches, carefully drop the dough into the hot oil and fry until golden brown. Drain on paper towels.
For the topping: Warm the honey, lemon juice and orange juice in a small saucepan. Brush the honey mixture onto the warm cakes, sprinkle with sesame seeds and serve immediately.
