2 Tbsps good-quality olive oil
32 ozs carrots (all of a similar size and thickness, peeled and trimmed)
coarse salt (to taste)
freshly ground Black pepper (to taste)
2 Tbsps dark brown sugar
1 Tbsp honey (or maple syrup)
½ cup water
2 Tbsps butter
1 sprig fresh parsley (finely chopped)

Preparation steps

Heat the oil, over medium heat, in a skillet large enough to hold the carrots. Add the carrots and season to taste with salt and pepper. Using a large spoon, stir the carrots and coat completely with oil and seasoning. Cook for 3 to 5 minutes, stirring frequently.

Add the brown sugar and honey or maple syrup and continue to cook for several minutes, stirring every once in awhile. Add water, starting with 1/2 cup. Cook the carrots until they become tender, about 5 to 8 minutes, adding more water just if needed. The sauce should be thick enough to coat the carrots. Check for doneness by piercing the carrots with the tip of knife. The carrots should be tender but firm.

Add the butter and half of the parsley, swirling to melt the butter and coat the carrots. Transfer the carrots to a serving bowl and garnish with remaining chopped parsley. Serve.
