- 28 ozs lean lamb
- 1 pc ginger
- 1 tsp Cardamom
- 1 tsp Garam Masala (spice mix)
- ½ tsp Ground clove
- 1 dried chili pepper
- 2 onions
- 2 Tbsps Ghee (or substitute clarified butter or vegetable oil)
- 2 Tbsps flour
- salt
- 14 ozs Beef broth
- 3 Tbsps Heavy cream
- 7 ozs Natural yogurt
Preparation steps

Cut lamb into cubes. Peel ginger and finely chop. Lightly press cardamom pods with a knife. Mix lamb in a bowl with ginger, cardamom, garam masala, cloves and dried chile pepper and let rest for at least 15 minutes. Peel onions and chop. Heat ghee in a large saucepan. Mix marinated meat with flour, fry in hot oil over medium heat and season with salt.

Add onions to the saucepan and sauté for 2 minutes. Add broth and boil while stirring. Reduce heat, cover and cook lamb curry covered over low heat for 30 minutes while stirring occasionally. Then stir in cream and cook covered for another 30 minutes. Just before serving, add yogurt stir and season with salt to taste. Serve in bowls.
