4 Tbsps raisins
2 Zucchini
2 Bell pepper
2 onions
2 red chili peppers
4 Tbsps olive oil
1 tsp Garam Masala
½ tsp Cumin (ground)
1.333 cups vegetable stock
salt
freshly ground Black pepper
cayenne pepper
4 pcs Salmon fillet (each weighing approx. 200 g)

Preparation steps

preheated oven 180°

Soak the raisins in a little warm water.

Wash the courgette, cut off the ends and slice thinly. Wash, trim, halve and deseed the pepper, remove all the white inner ribs and cut the flesh into strips. Peel and finely dice the onion.

Wash the chilli, slit open lengthwise, remove the seeds and all the white inner ribs and dice the flesh very finely.

Heat the oil in a wide, ovenproof frying pan and sweat the onion, chilli, garam masala and cumin until the onion is soft. Add the courgettes and peppers and fry for about 2 minutes, stirring. Add the drained raisins and stock, season with salt, pepper and cayenne pepper and simmer for about 5 minutes. Then place the salmon on the vegetables, put some of the vegetables on top and spoon a little liquid over and cook in a preheated oven (180°) for 8-10 minutes. Take out and serve on plates with saffron rice.
