1 smaller Cauliflower (divided into small florets)
400 grams Tomatoes
3 Tbsps clarified butter
1 sm can Saffron
1 tsp Turmeric
½ tsp ground ginger
½ tsp Cumin
lemons (Juice)
salt
freshly ground peppers
2 Tbsps Coriander
2 Tbsps Crème fraiche

Preparation steps

1.

Blanch the cauliflower in a pot of salted water until crisp-tender, about 5 minutes. Drain well. Blanch the tomatoes in a pot of boiling water for 10 seconds. Drain, peel, core and cut into strips.

Heat the butter, saffron, turmeric, ginger and cumin in a skillet. Stir in the cauliflower and tomato and cook, stirring occasionally until the vegetables are tender,  about 4 minutes. Season with  salt and pepper. Stir in lemon juice, bring to a boil and serve garnished with the cilantro and a dollop of creme fraiche.
