3 ½ ozs semi-sweet chocolate (70%)
2 tsps Orange liqueur
2 tsps Crème fraiche (30%)
4 egg yolks
2 Tbsps sugar
4 egg whites
1 Tbsp plain flour
butter (for the cups)
brown sugar (for the cups)
Oranges (wedges)

Preparation steps

Chop the chocolate into small pieces and slowly melt in a bowl over a pan of hot water, together with the orange liqueur and the crème fraîche. Let cool. Beat the egg yolks with the sugar until light and creamy, then slowly drizzle in the melted chocolate and stir. Sift in the flour and fold into the chocolate. Whisk the egg whites until stiff, then carefully fold into the cake batter. Butter some ovenproof cups and sprinkle with sugar. Pour the batter into the cups until 2/3 full. Bake in a preheated oven at 375°F (180°C) for about 20 minutes. Do not open the oven door!

Garnish the cakes with orange wedges and serve immediately.
