- For the cheesecakes
- ¼ cup butter
- ¾ cup Oatmeal Cookie
- 1.333 cups Quark
- ⅔ cup cream cheese
- 0.333 cup sugar
- 2 Tbsps Vanilla sugar
- ⅜ cup Lime juice
- 1 tsp unwaxed Lime zest
- 1 Tbsp Corn starch
- 2 eggs
- To garnish
- 1.333 cups Strawberries (six sliced and set aside to garnish)
- 2 Tbsps powdered sugar
- 3 Tbsps Orange juice
Preparation steps

Melt the butter and crush the cookies in a freezer bag with a rolling pin. Mix together the butter and biscuit crumbs.

Heat the oven to 160°C (140°C in a fan oven), 325°F, gas 3 and line a baking tray with greaseproof paper.

Place six stainless steel dessert rings (approx. 9 cm ?) on the prepared baking tray and put the base mixture inside the rings pressing firmly with the back of a spoon. Chill in the fridge.

Mix together the quark, cream cheese, sugar and vanilla sugar until smooth. Stir in the lime juice, zest and the cornflour. Mix in the eggs one at a time and then transfer the mixture to the rings. Bake for around 40 minutes then remove from the oven and leave to cool.
5.
Purée the strawberries with the icing sugar and the orange juice and sieve finely. Remove the rings from the cakes and top with the sliced strawberries and the strawberry sauce.
