1 cup chicken stock (or broth)
coarse salt (to taste)
freshly ground Black pepper (to taste)
2 sprigs fresh rosemary
Parmesan grated; for garnish (optional)

Preparation steps

Melt oil and butter in a medium saucepan over medium heat. Add onion, carrot, and celery; cook stirring frequently until the vegetables are golden and soft. Add the garlic and stir until fragrant, about 1 minute. Chop the sausage into bite size pieces and it to the saucepan. Cook, stirring, until the sausage has browned on all sides. Add the red wine; cook until the wine has reduced my half. Add the tomatoes and chicken stock. Season with salt and pepper. Reduce heat and simmer with the lid partially on for 30 to 35 minutes.

Garnish with rosemary and sprinkle with Parmesan cheese, if desired. Serve immediately
