13 ozs thin Rice noodles
2 Tbsps sesame oil
2 red chili peppers (seeds removed; chopped)
4 mild, green chili peppers
1 ¼ inches fresh ginger (finely chopped)
3 cloves garlic cloves (finely chopped)
6 scallions (shaved into thin strips)
2 ⅔ cups raw shrimp (shelled)
2 heads Bok Choy (shredded)
½ Cucumber (sliced wafer thin)
2 sprigs cilantro (leaves only)
cup Rice wine
2 Tbsps gluten-free soy sauce
1 Lime (juice only)

Preparation steps

1.
Cook the noodles according to the packet instructions. Set aside.
2.
Heat the sesame oil in a large frying pan or wok and add the chillies, ginger and garlic and stir-fry for 30 seconds.
3.
Add the spring onions and prawns and cook for 3-4 minutes until the prawns turn pink.
4.
Add the cooked noodles, pak choi, cucumber, coriander, rice wine, soy sauce and lime juice. Stir-fry until the noodles are heated through and serve immediately.
