- 4 Kiwi (peeled and quartered)
- xylitol (or other sugar substitute to taste)
- 2 ¼ tsps Powdered gelatine
- water
- 1 cup cream
- green Food coloring
- To decorate
- Whipped cream
- sliced Kiwi
Preparation steps
1.
Place the kiwi fruit in a food processor and blend to a rough puree. There should be about 9 fl oz of puree.
2.
Heat the puree gently in a pan until warm. If it is too thick add 1-2 tablespoons water. Remove from the heat and stir in sweetener to taste.
3.
Sprinkle the gelatine over 3 tablespoons of water in a cup until dissolved completely.
4.
Mix the gelatine into the warm kiwi mixture and mix well. Remove from the heat, stir in the food colouring and leave to cool.
5.
Whisk the cream until thick. Gently fold into the kiwi mixture until blended.
6.
Spoon into serving glasses and chill until set.
7.
Decorate with whipped cream and kiwi fruit slices.
