Preparation steps

1.

For each cup of couscous, pour 1 cup boiling water over it and let it soak for 5 minutes. Fluff the couscous with a fork and keep warm.

2.

Rinse the chicken legs and pat dry with paper towels.

3.

Season the ground lamb with salt, pepper and 1/2 teaspoon ground red pepper and shape into small meatballs. Saute the meatballs in 1 tablespoon oil until browned, then set aside.

4.

Rinse the vegetables, peel or brush and cut into bite-sized pieces. Blanch the tomatoes and peel. Saute the spices in the remaining hot oil, add the vegetables and the chicken legs and pour in the broth. Add the cinnamon to the broth and cook everything over low heat for 30 minutes. Add the chickpeas and meatballs and heat. Divide the couscous into bowls and top with the meat and the vegetables and serve.
