- 3.333 cups lamb (from the leg, boned, trimmed and cut into bite-sized pieces)
- 1 Tbsp sesame oil
- 2 Tbsps dry sherry
- 1 clove garlic cloves
- 1 tsp grated ginger
- 1 tsp honey
- 1 Zucchini (diced)
- wooden Skewer (soaked in water)
- For the tomato sauce
- 1 shallot (peeled and finely diced)
- 1 clove garlic cloves (peeled and finely diced)
- 2 Tbsps olive oil
- 6 Tomatoes (washed and diced)
- 1 dash white wine
- 1 Tbsp chopped thyme
- salt
- cayenne pepper
Preparation steps

Mix the sesame oil, sherry, pressed garlic, ginger and honey and marinate the lamb in the mixture for about 1 hour.

For the sauce, heat the olive oil in a pan and sweat the garlic and shallot until soft. Add the tomatoes and white wine and simmer for 5-10 minutes. Then add the thyme and season to taste with salt and cayenne pepper.

Thread the lamb and courgettes on wooden skewers, brush with the remaining marinade and grill on a barbecue (not too hot) for 6-8 minutes, turning occasionally.

Season with salt and serve with the tomato sauce.
