- 2 eggs
- 4 Tbsps lemon juice
- 3 Tbsps Tomato paste
- 90 grams Pastry flour
- 100 grams shallots
- salt
- 2 tsps peppers
- 800 grams Lamb shoulder
- ½ bunch Lemon balm
- 150 grams Whipped cream
- cayenne pepper
- 8 Wooden skewers
- 6 Tbsps blanched Sesame seeds
Preparation steps
Whisk eggs in a bowl. Mix with 2 tablespoons of lemon juice, tomato paste and flour to make a marinade.
Peel shallots, finely chop and mix with the marinade and season with salt and pepper.
Trim lamb to remove skin and tendons as necessary and cut meat into 2 1/2 cm x 2 1/2 cm (approximately 1 inch x 1 inch) cubes.
Mix lamb cubes with marinade and let soak for 3-4 hours.
Rinse lemon and pat dry.
Pluck lemon balm leaves from the stems and cut into fine strips. Mix sour cream in a bowl with remaining lemon juice and season with salt, pepper and cayenne pepper. Stir in lemon.
Preheat a gas barbecue or oven broiler. Cover grill with aluminum foil.
Place skewers on the foil and cook for 5-10 minutes. Turn skewers and cook, watching carefully for another 5-10 minutes.
Serve with lemon sauce.
