For the lamb skewers
800 grams lamb (shoulder or leg)
2 Bell pepper (red and yellow)
2 onions
2 garlic cloves
2 Tbsps freshly chopped Fresh herbs (such as thyme and oregano)
5 Tbsps olive oil
For the salad
4 Tomatoes
150 grams Lettuce (such as lettuce and Lollo Rosso)
1 onion
4 scallions
For the dressing
150 grams Yogurt (0.1% fat)
1 Tbsp lemon juice
salt
freshly ground peppers

Preparation steps

For the lamb skewers: rinse and pat dry lamb, cut into cubes. Rinse bell peppers, halve and remove seeds and ribs, cut into bite-sized pieces. Peel onions and cut into quarters. Thread peppers, meat and onions in alternating manner on wooden skewers. Peel garlic and chop finely. Mix with herbs and oil. Brush meat with the mixture and grill on hot grill or grill pan for about 8-10 minutes on all sides.

For the salad: rinse tomatoes, cut out stalks and cut tomatoes into thin slices. Rinse and spin dry letuce, tear into bite-sized pieces. Peel onion and cut into rings. Rinse and dry scallions, cut green parts into strips and white parts into rings. Arrange all salad ingredients decoratively on plates. For the dressing: mix yogurt with a little water and lemon juice and season with salt and pepper. Drizzle over salad. Serve salad with kebabs.
