800 grams lamb (such as shoulder)
250 grams Dried plum
6 shallots
2 garlic cloves
½ tsp Ground cinnamon
2 tsps Black cumin seeds
1 tsp Turmeric
1 tsp ginger (freshly grated)
3 Tbsps olive oil
1 Tbsp butter
2 Tbsps Sesame seeds
salt
peppers (freshly ground)

Preparation steps

1.

Soak prunes with with 400 ml (approximately 1 2/3 cup) of lukewarm water for about 2 hours. Drain, collecting all soaking water.

Peel shallots and garlic. Cut shallots in rings and garlic into thin slices.

Rinse lamb, pat dry and cut into bite-sized pieces. Heat oil and butter in a tagine and brown meat on all sides. Add shallots and garlic and saute briefly. Add cinnamon, black cumin, turmeric and ginger. Deglaze with soaking prune water. Cover and simmer on low heat  for about 45 minutes.

Toast sesame seeds in a dry pan until golden yellow, add plums to sesame seeds. Add plums to tagine cook for about 15-20 minutes. Add some water if needed. Season with salt and pepper and serve.
