- 4 Kohlrabi (800 grams)
- 1 organic Orange (zested)
- 1 onion
- 400 milliliters Whipped cream
- 4 Tbsps Pumpkin seed
- 600 grams Lamb fillet
- 1 rosemary
- salt
- freshly ground peppers
- olive oil
Preparation steps
1.
Peel kohlrabi and cut or slice into thin slices.

Brush 4 rectangular ramekins (each about 12 x 12 cm/approximately 5 x 5 inches) with oil and preheat the oven to 200°C (approximately 400°F) convection.

Layer kohlrabi slices in the ramekins, season with salt and pepper and pour cream over each. Bake in the oven approximately 30 minutes.

Rinse lamb, pat dry and cook on all sides in a pan with 2 tablespoons olive oil and the rosemary until golden brown, about 5 minutes. Season with salt and pepper.

Peel the onions, cut into rings and fry in 1 tablespoon oil until browned. Add pumpkin seeds and spread over the ramekins. Bake until golden brown, about 5 minutes. Serve with the lamb.
