Preparation steps

1.

Boil lasagna noodles in salted water for 5-10 minutes. Remove, place in a bowl of cold water and 2 tablespoons of oil and cool. Once cool, place noodles on a kitchen towel, pat dry and cut in half.

2.

Rinse peppers, cut in half, remove seeds and ribs and cut into bite-size pieces. Cut bacon into pieces. Peel onion and garlic and finely chop. Rinse sage, shake dry and pluck off leaves.

3.

Heat remaining oil in a frying pan and briefly cook bacon. Add onion, garlic and peppers. Cook for an additional 3-5 minutes. Remove from heat, add lasagna noodles and 2/3 of sage leaves. Toss briefly, season with salt and pepper and arrange on warmed plates. Serve with remaining sage leaves as garnish and sprinkle on Parmesan cheese if desired.
