- For the dough
- 200 grams almonds (peeled)
- 100 grams powdered sugar
- 150 grams softened butter
- 2 Tbsps grated Lemon peel (organic)
- 1 egg
- 200 grams Pastry flour
- 1 Tbsp lemon juice
Preparation steps

For the dough, finely grind the almonds with the powdered sugar. Beat the butter, lemon zest and egg until creamy. Stir in the almond sugar, flour and lemon juice. Shape the dough into 2 rolls (each approximately 5 cm in diameter), wrap in plastic and chill for at least 3 hours.

Cut 4 mm (approximately 1/4 inch) thick slices from the rolls and place the cookies on a lined baking sheet.
For the topping, brush the cookies with the beaten egg yolk. Rinse, dry and thinly slice the lemons. Top the cookies with lemon slices, sprinkle with sugar and bake for 12-15 minutes at 180°C (approximately 350°F). Remove from the oven, let cool and serve.
