3 lemons (juiced and zested)
1 egg white
4 medium lemons (or oranges)

Any citrus will work for this recipe. Try orange or grapefruit for an interesting twist.

Preparation steps

1.

For the sorbet: Bring the sugar to a boil with 2 1/2 cups of water, stirring constantly, until the sugar is dissolved. Then stir in lemon zest and simmer for about 10 minutes, until syrupy. Remove from the heat and let cool.

Stir in the lemon juice and pour the mixture into a shallow metal tray and freeze for 2 hours, until semi-solid.

Beat the egg white until stiff. Pour the sorbet mixture into a mixing bowl and mix with the egg whites until smooth. Return the sorbet to the freezer for another hour.

3.

Cut the top quarter off of the whole lemons or oranges and carefully scoop out the flesh with a sharp spoon. Scoop the nearly frozen sorbet into the citrus "bowls" and return to the freezer for another 2 hours.

4.

For serving: Garnish with orange and lemon zest.
