- 1 l Chicken broth
- 200 grams Chicken breasts
- 100 grams Sweet potato
- 100 grams scallions
- 1 garlic clove
- 4 Tbsps lemon juice
- 1 tsp Lemon peel
- 1 Tbsp Turmeric
- 2 tsps ground coriander
- salt
- 50 grams Glass noodles
- 100 grams soybean sprout
- 1 bunch cilantro
- ½ red Pepperoncini
- 2 lemons
Preparation steps
1.
Bring chicken broth to a boil. Cut chicken breasts into thin strips. Peel potatoes, cut into thin slices. Rinse and dry scallions, cut into thin rings. Peel garlic and chop finely. Add everything together with lemon zest and spices to the broth and simmer for 10 minutes.

Soak glass noodles in a bowl og hot water according to package instructions. Drain, cut with scissors into bite-sized pieces.
3.
Combine glass noodles with bean sprouts, cilantro leaves, cut chile peppers, and quartered lemon slices. Add to chicken soup. Pour into bowls and serve.
