- For the crumble topping
- 200 grams Pastry flour
- 80 grams sugar
- 1 organic lemon (zested)
- 1 egg yolk
- 120 grams melted butter
- For the base
- 250 grams butter
- 250 grams sugar
- 2 organic lemons (zested)
- 1 pinch salt
- 5 eggs
- 250 grams Pastry flour
- 120 grams cornstarch
- 3 tsps Baking powder
- Also
- 3 Tbsps powdered sugar (for dusting)
Preparation steps

For the crumble topping, mix the sugar with lemon zest, egg yolks and melted butter with two forks until crumbly.
For the base, beat the butter with sugar, lemon zest and salt. Add the eggs successively into the butter mixture and mix well; mix each egg for 2 minutes. Mix the flour with cornstarch and baking powder, and stir briefly along with the lemon juice into the egg-butter mixture.
Pour the batter evenly into a greased baking sheet and sprinkle with crumble topping. Bake in a preheated oven at 175°C (fan: 155°C, gas mark 2) (approximately 350°F) for about 35-40 minutes.
Allow the baked streusel to cool and serve dusted with powdered sugar.
