4 cups small new Potato
2 ½ cups carrots
2 cups Snow peas
2 Tbsps Lime juice
1 tsp Lime zest
2 cloves garlic cloves
0.333 cup soft butter
4 Chicken breasts (skinned)

Preparation steps

1.
Wash the potatoes well and cook in boiling, salted water for about 25 minutes.

Wash, peel and slice the carrots. Wash and trim the snow peas. Blanch the carrots in boiling, salted water for 3-4 minutes, then drain, refresh in cold water and drain thoroughly.

Peel the garlic. Mix the lime juice and zest with 50 g/1/4 cup/ 1/2 stick butter. Press the garlic into the butter and season with a little salt. Mix well.

Season the chicken with salt and pepper. Put into a baking dish and spread with the garlic and lime butter. Broil under a preheated broiler for 5-10 minutes each side.
5.
To serve, heat the vegetables in the rest of the butter and season with salt and pepper. Wash, dry and shred the basil. Drain the potatoes and put into a serving dish. Scatter the vegetables with basil and put on plates with the chicken breasts. Serve at once garnished with lime slices.
