- 2 ½ whole Limes
- 3 sheets gelatin
- 1 egg
- 4 Tbsps Vanilla sugar
- 150 grams Greek yogurt
- Peppermint leaf (for garnish)
Preparation steps

Zest and juice 2 of the limes. Soak the gelatin in cold water. Separate the egg. Whisk together the egg yolk, lime zest, lime juice and vanilla sugar in a double boiler or heatproof bowl over a saucepan of simmering water.

Continue whisking until the mixture is light and foamy. Remove from heat. Squeeze the excess water from the gelatin sheets and whisk into the egg yolk mixture until dissolved. Stir in the yogurt and refrigerate for about 15 minutes.

Beat the egg white until stiff and gently fold into the cooled yogurt mixture. Slice the remaining lime into thin slices and trim the slices into heart shapes. Spoon the lime mousse into serving glasses and garnish with the lime hearts and peppermint leaves.
