Yogurt supplies lactic acid bacteria, which helps support a healthy intestinal flora. Thanks to its high magnesium content, cashews support the nervous system and muscles; the mineral also protects against cramps and sore muscles.
For an exotic touch, you can also prepare the cream with coconut yogurt and replace half of the cashews for the topping with coconut flakes.

- 14 ozs Yogurt (3.5% fat)
- 2 Limes (peel and juice)
- 4 stalks mint
- 3 tsps gelatin (-Unflavored powder for cold dishes)
- 4 Tbsps honey
- 3 ½ ozs Whipped cream
- 1 ½ ozs Cashews
Preparation steps
Mix the yogurt with 3/4 of the limes zest and the whole limes juice until smooth. Wash the mint, shake dry, set aside 1 stem for the garnish, chop the rest finely and mix into the yogurt.
Add the gelatin and honey and stir for 1 minute with a whisk. Whip the cream until stiff and fold into the yogurt. Pour cream into 4 glasses and chill for 2 hours.
Shortly before serving, roast the cashew nuts in a hot pan without fat for 3 minutes at medium heat. Sprinkle lime and mint cream with some lemon peel and the cashew nuts.
