1.
Wash the potatoes well and boil in their skins with a little salt for about 25 minutes. Drain and peel (if you wish).

Wash the herbs, shake dry and chop. Cut the ham into pieces.

Melt the butter in a pan and stir in the flour with a whisk. Sweat briefly, then stir in the cream and briefly bring to the boil. Simmer gently for about 10 minutes, stirring frequently. Season with salt and freshly ground pepper and pour over the potatoes. Scatter with the chopped ham and fresh herbs and serve.
