- 1 egg (size M)
- 12 mini Marshmallow (on a waffle base)
- ¼ cup brown sugar
- 2 tsps vanilla extract
- ⅜ cup vegetable oil
- 1 cup Buttermilk
- 1 ⅔ cups plain flour
- 2 ½ tsps Baking powder
- ½ tsp baking soda
- Also needed
- ½ cup Mascarpone (or full fat cream cheese, 60 % fat content)
- 2 Tbsps powdered sugar
Preparation steps

Heat the oven to 180C (160 fan) 350F, gas 4.

Butter the muffin pan. Beat the egg in a bowl. Cut off the waffle base from each marshmallow and reserve to decorate. Beat the marshmallows with a fork.

Add half the marshmallow to the egg. Beat in the sugar, vanilla extract, oil and buttermilk. Mix the flour with the baking powder and baking soda. Add the flour to the egg mixture and beat quickly, until the dry ingredients are moist. Spoon the dough into the muffin pan.

Bake on the middle shelf for 20-25 minutes. Test with a wooden toothpick: if it comes out clean, the muffins are done. Let the muffins cool 5 minutes in the pan, then turn out carefully and cool completely on a wire rack.

To serve: Beat the mascarpone with the icing sugar. Mix in the remaining marshmallow. Cut the muffins in half horizontally. Spread a little of the marshmallow cream on each muffin base and top with the other half. Spread the rest of the marshmallow cream over the muffins and decorate with the waffle marshmallow bases.
