¼ cup butter (melted)
1 ½ Tbsps Golden syrup
½ cup sugar
1 egg yolk
1 ½ cups all-purpose flour
1 tsp Baking powder
1 generous pinch ground ginger
1 generous pinch ground cinnamon
1 generous pinch ground mixed spice
1 pinch salt
¾ cup Chocolate chip
To decorate
mini Marshmallow

Product recommendation
The cookies will spread as they cook, so need to be spaced well apart on the baking tray. Use white chocolate chips instead of plain or milk chocolate for a change.

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Mix together the butter, syrup, sugar and egg yolk in a mixing bowl.
3.
Sift in the flour, baking powder, spices and salt and work to a dough. Knead in the chocolate chips.

Put teaspoonfuls of the mixture on the baking trays, leaving plenty of space between them. Bake for 12-15 minutes until golden.
5.
Half way through the baking time, gently press mini marshmallows and chocolate chips into the top of the cookies and bake until done. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
