- 1 cup shelled Walnut
- 2 ¼ cups flour
- 1 tsp Baking powder (level)
- ⅜ cup Maple syrup
- 0.333 cup brown sugar
- 1 pinch salt
- 1 egg
- ½ cup cold butter
- 1 generous pinch Gingerbread spice
- 30 Walnut
Preparation steps

Finely grind the walnuts and mix with the flour and baking powder. Add 2 tbsp maple syrup, the sugar, salt, egg and butter (in small flakes) and knead to a smooth dough. Divide into two halves and roll each one to a sausage approximately 2 cm in diameter. Wrap in foil and chill for about 1 hour. Then cut into approximately 1.5 cm slices and roll into balls. Place the balls on two baking trays lined with baking parchment and bake in a preheated oven (180°C) for 8-10 minutes. Cool on a cake rack.

Put the rest of the maple syrup into a small pan with the gingerbread spice and heat over a medium heat for about 10 minutes, stirring occasionally, until thick and syrupy. Leave to stand briefly. Halve the walnuts lengthwise. Brush the walnut balls with the syrup and decorate each one with a halved walnut. Leave to dry. Place in paper petit four cases.
