- 4 firm Pear (peeled, quartered and cores removed)
- 2 Tbsps Coconut oil
- 2 Tbsps Maple syrup
- 1 Tbsp lemon juice (freshly squeezed)
- 1 tsp ground cinnamon
- Vanilla bean (from one pod)
- ¼ cup water
- ½ cup Walnut
Preparation steps
1.
Preheat oven to 350° F/ 175° C. Place pears in a baking tray lined with parchment.
2.
Mix together coconut oil, syrup, lemon juice, cinnamon and vanilla. Pour mixture over pears and toss pears gently so fully coated, then turn pears so the cut side is facing down.
3.
Pour water into tray and cover tray with foil. Bake for 30 minutes.
4.
Remove foil and turn pears over, so cut side is facing up. Replace foil and bake for another 20 minutes.
5.
Add in walnuts and a bit of water if syrup has become too dry. Bake for another 10 minutes without foil.
